-I can’t find “turn tags off” in the “translate into…” part when creating custom shortcuts. I would like to say “tags off” so that would be helpful. Thanks!

I just tried making a shortcut to “untag” it works fine. I will look into why it’s not in the autocomplete.

If you have programming experience, you could make a custom plugin to do that: docs.lipsurf.com

You simply write “untag”. It doesn’t need to be in the autocomplete to work.
I can’t say tags off. Hopefully in a future update 
You can always map “tags off” => “untag” as a custom shortcut. The reason it won’t be a default command is because it would delay the “tags” command because we would need to wait to determine if you’re saying “tags” or “tags off”
